Wood cutting boards are very popular and look great in every kitchen. They are also great for your knives because wood does not dull the blade, but they may be hiding some not-so-friendly bacteria in them. Make sure your boards are made of the right material. Some woods, like pine, red oak and balsa, are very porous and will absorb anything you put on them. Hardwoods with tight grain and small pores are best for wooden cutting boards. Hard maple is the preferred hardwood because it is durable, resilient, knife-friendly, easy to clean, sanitary and inhibits bacteria growth.
